Cauliflower Tacos with Chipotle Mayonnaise

So, vegan tacos are definitely one of my favorite dishes when I'm looking for something delicious and creative because there are no limits. I love discovering new flavors and I tried these tacos in a restaurant, but each one cost €4.50, which I find pretty outrageous, even though they were delicious. So I decided to make my own version.

First, I cut the cauliflower into small florets and seasoned them with a spice mix that gave them a nice flavor. Then I roasted them in the oven until they were nice and crispy.

For the vegan chipotle mayonnaise, I mixed vegan mayonnaise with a few chipotle chilies and added a little lime juice. The result was a creamy and flavorful sauce that went perfectly with the tacos.

For the topping, I chose carrot strips and red onions. I love the crunchy bite of the carrots and the slight spiciness of the red onions. They complement the cauliflower and vegan chipotle mayonnaise perfectly.

After everything was prepared, I made the tacos by first spreading the vegan chipotle mayonnaise on the tortillas, then placing the grilled cauliflower on top and finally the carrot strips and red onions as a topping. Then I rolled them up nicely and served.

The best thing about these vegan tacos is that not only are they incredibly delicious, but they are also completely customizable. You can experiment with the toppings and make them to your own taste. They are perfect for a relaxed dinner at home or to impress guests. I just love making and enjoying them!
