Esquites, also known as Mexican corn salad, is more than just a meal; it's a piece of culture that is deeply rooted in the heart of the Mexican community. Growing up with regular trips with my mother through the enchanting Pueblos Mágicos of Mexico, this dish became a symbol of adventure and family bonding. Every spoonful of the delicious esquites we enjoyed on these trips tasted of discovery and community.
