This Mexican parsley lime rice is more than just a side dish - it's a flavor explosion that will enchant the senses. I was inspired to create this recipe on a trip to Mexico. In a small family restaurant in Playa del Carmen, I was served this refreshing rice as a side dish with enchiladas. The combination of fresh parsley and lime was so surprising and delicious that I decided to recreate the recipe at home and add my own touch. Since then, this rice has been a staple in my kitchen and always reminds me of the wonderful flavors and experiences of my trip to Playa del Carmen.
