The flavor comes from the nutritional yeast, which tastes very "cheesy." I also make sure that it melts nicely when heated and develops a pleasantly creamy texture - ideal for quesadillas or pizza!

What is vegan mozzarella made of?

For my homemade vegan mozzarella, I mainly use cashew nuts. These are soaked and then pureed to form the basis for the cheese mixture. Ingredients such as potato starch ensure the right stretchability and meltability, while nutritional yeast, garlic and lime juice provide the characteristic taste.
